Crispy Cod Fish Sandwich with Tartar Sauce

Ingredients:

For the Crispy Cod:

  • 4 cod fillets, about 5 oz each
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten

  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper

For the Tartar Sauce:

  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp finely chopped dill pickles
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp capers, finely chopped
  • Salt and black pepper, to taste

For the Sandwiches:

  • 4 brioche or whole wheat buns
  • 2 cups finely shredded cabbage
  • 1 large tomato, sliced
  • 4 lettuce leaves
  • Lemon wedges, for serving

Instructions:

  • Prepare the Tartar Sauce: Combine Greek yogurt, mayonnaise, chopped pickles, dill, lemon juice, Dijon mustard, and capers in a small bowl. Season with salt and black pepper. Refrigerate while preparing the fish.
  • Season the Cod: Pat the cod fillets completely dry with paper towels. Season with salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Bread the Fish: Place the flour, beaten eggs, and panko breadcrumbs into three separate shallow dishes. Dredge each cod fillet in flour, dip into the egg, then press firmly into the panko until completely coated.
  • Fry the Cod: Add about 1/2 inch of oil to a large skillet and heat to approximately 350°F. Fry the cod for 3–4 minutes per side until deeply golden, crispy, and cooked through. The center should reach 145°F. Transfer to a wire rack to drain.
  • Toast the Buns: Lightly toast the buns in a dry skillet or under the broiler until golden around the edges.
  • Assemble the Sandwiches: Spread tartar sauce generously over the bottom bun. Layer with lettuce, crispy cod, shredded cabbage, tomato, and an additional spoonful of tartar sauce.
  • Serve: Top with the remaining bun and serve immediately with fresh lemon wedges.

  • Cod: Choose firm, thick cod fillets with a fresh, mild aroma. Fresh or properly thawed frozen cod both work well.
  • Panko: Japanese-style panko breadcrumbs create a lighter and crispier crust than traditional breadcrumbs.
  • Cabbage: Look for a firm, tightly packed head of cabbage with crisp leaves.
  • Greek Yogurt: Choose plain, unsweetened Greek yogurt for a thick and creamy tartar sauce.

Cooking Tips:

  • Pat the cod thoroughly dry before breading to help the coating adhere and become extra crispy.
  • Keep the frying oil around 350°F. Oil that is too cool can create a greasy coating.
