Ingredients:

For the Key Lime Filling:

  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh Key lime juice
  • 1 tbsp finely grated Key lime zest
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Fresh Key lime zest
  • Thin Key lime slices, for garnish

Instructions:

  • Prepare the Crust: Preheat the oven to 350°F. Combine the graham cracker crumbs, sugar, melted butter, and sea salt. Press firmly into the bottom and sides of a 9-inch pie dish.
  • Bake the Crust: Bake for 8–10 minutes until lightly golden and fragrant. Remove from the oven and allow to cool slightly.
  • Prepare the Filling: Whisk the egg yolks until smooth and slightly thickened. Add the sweetened condensed milk, Key lime juice, zest, Greek yogurt, and vanilla. Whisk until completely smooth and creamy.
  • Fill the Pie: Pour the Key lime mixture into the prepared crust and smooth the surface.
  • Bake: Return the pie to the oven and bake for 15–17 minutes. The edges should be set while the center retains a slight jiggle.
  • Chill: Allow the pie to cool to room temperature, then refrigerate for at least 4 hours or overnight until completely set.
  • Prepare the Whipped Cream: Beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
  • Garnish and Serve: Top the chilled pie with whipped cream and finish with fresh Key lime zest and thin lime slices. Slice and serve cold.
