Instructions:

  • Cook the Rice: In a medium saucepan, combine rice, coconut milk, water, and sea salt. Bring to a gentle boil over medium heat, then reduce the heat to low and cover. Simmer for about 18 to 20 minutes until the rice is soft and most of the liquid has absorbed.

  • Create the Creamy Pudding: Stir in maple syrup or honey, vanilla extract, and cinnamon. Continue cooking uncovered over low heat for about 8 to 10 minutes, stirring frequently, until the pudding thickens and becomes creamy.

  • Adjust the Texture: If the pudding becomes too thick, stir in a few tablespoons of coconut milk or warm water until the desired consistency is reached.

  • Serve: Spoon the coconut rice pudding into bowls while warm.

  • Add Garnish: Top with toasted coconut flakes, fresh mango slices or berries, and a sprinkle of chia seeds if desired.
