Chicken Kebab with Lemon Turmeric Rice

Instructions:

  • Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. In a saucepan, heat olive oil over medium heat. Add rice, turmeric, sea salt, and water or broth. Bring to a boil, then reduce heat to low, cover, and cook for about 15 minutes until the rice is tender. Stir in lemon juice and fluff with a fork.

  • Marinate the Chicken: In a bowl, combine olive oil, garlic, paprika, cumin, sea salt, black pepper, lemon juice, and parsley. Add the cubed chicken and toss well to coat. Allow the chicken to marinate for at least 10 minutes.

  • Assemble the Kebabs: Thread the marinated chicken pieces onto skewers.

  • Cook the Kebabs: Heat a grill pan, skillet, or outdoor grill over medium-high heat. Cook the kebabs for about 10 to 12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.

  • Assemble the Dish: Divide the lemon turmeric rice between serving plates. Place the grilled chicken kebabs on top of the rice and garnish with chopped parsley and lemon wedges.
