Benefits: This carrot walnut spice cake is rich in nutrients that help support healthy, radiant skin while satisfying your sweet tooth. Carrots are packed with beta carotene, which converts to vitamin A in the body and helps support skin renewal and protection. Walnuts provide omega fatty acids that help maintain skin hydration and elasticity. Warming spices like cinnamon and nutmeg contain antioxidants that help protect skin cells from environmental stress. With wholesome ingredients and natural sweetness, this dessert nourishes both the body and the skin.

Prep Time: 15 minutes | Cook Time: 40 minutes | Serves: 8

Ingredients:

For the Cake:

  • 2 cups grated carrots

  • 1 ½ cups all purpose flour

  • ¾ cup brown sugar

  • ½ cup maple syrup

  • ½ cup olive oil

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp ground ginger

  • ½ tsp sea salt

  • ¾ cup chopped walnuts

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened

  • 3 tbsp maple syrup

  • 1 tsp vanilla extract

For Garnish:

  • 2 tbsp chopped walnuts

  • Light sprinkle of cinnamon

Instructions:

  • Prepare the Oven and Pan: Preheat the oven to 350°F. Lightly grease an 8 inch cake pan or line it with parchment paper.

  • Mix the Wet Ingredients: In a large bowl, whisk together eggs, maple syrup, olive oil, brown sugar, and vanilla extract until smooth.

  • Combine the Dry Ingredients: In a separate bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and sea salt.

  • Create the Batter: Gradually fold the dry ingredients into the wet mixture until just combined. Stir in grated carrots and chopped walnuts.

  • Bake the Cake: Pour the batter into the prepared cake pan and spread evenly. Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

  • Prepare the Frosting: In a bowl, beat the cream cheese, maple syrup, and vanilla extract until smooth and creamy.

  • Assemble the Cake: Spread the cream cheese frosting evenly over the cooled cake. Sprinkle chopped walnuts and a light dusting of cinnamon on top.

Shopping Tips:

  • Choose firm, brightly colored carrots for the sweetest flavor.

  • Look for raw walnuts stored in airtight containers to ensure freshness.

  • Use pure maple syrup instead of artificial syrups for better flavor and quality.

Cooking Tips:

  • Finely grate the carrots so they blend smoothly into the cake batter.

  • Do not overmix the batter to keep the cake soft and tender.

  • Let the cake cool completely before frosting to prevent the frosting from melting.

This carrot walnut spice cake is a comforting dessert filled with warming spices and nourishing ingredients that help support glowing skin while delivering rich, satisfying flavor.
