Creamy Tuscan Salmon Pasta

Ingredients:

For the Salmon:

  • 2 salmon fillets, skin removed

  • 1 tbsp olive oil

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • ½ tsp paprika

For the Pasta:

  • 10 oz penne or fettuccine pasta

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • ½ cup sun dried tomatoes, chopped

  • 1 cup fresh spinach

  • 1 cup heavy cream

  • ½ cup grated parmesan cheese

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • ½ tsp Italian seasoning

For Garnish:

  • 2 tbsp chopped fresh parsley

  • Extra grated parmesan cheese

Instructions:

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup pasta water, then drain the pasta and set aside.

  • Cook the Salmon: Heat olive oil in a large skillet over medium heat. Season the salmon with sea salt, black pepper, and paprika. Cook the salmon for about 4 to 5 minutes on each side until cooked through. Remove from the pan and set aside. Once cooled slightly, break the salmon into large chunks.

  • Prepare the Sauce: In the same skillet, heat olive oil over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Stir in the sun dried tomatoes and cook for another minute.

  • Make the Cream Sauce: Pour in the heavy cream and add Italian seasoning, sea salt, and black pepper. Simmer gently for about 3 to 4 minutes. Stir in parmesan cheese until the sauce becomes smooth and creamy.

  • Add Spinach and Pasta: Add the fresh spinach to the sauce and cook until wilted. Stir in the cooked pasta and toss to coat. If needed, add a splash of reserved pasta water to loosen the sauce.

  • Finish the Dish: Gently fold the salmon pieces into the pasta and sauce. Heat for another minute until everything is warmed through.

  • Serve: Plate the pasta and garnish with chopped parsley and extra parmesan cheese.
