Ingredients:

For the Croquettes:

  • 1 cup cooked wagyu beef, shredded or finely chopped

  • ½ cup mashed potatoes

  • ½ cup mozzarella cheese, cubed

  • 1 egg

  • ½ cup breadcrumbs

  • ¼ tsp sea salt

  • ¼ tsp black pepper

For Breading:

  • 1 cup breadcrumbs

  • 1 egg, beaten

For Frying:

  • Oil for frying

For the Caramelized Onion Aioli:

  • 1 tbsp olive oil

  • 1 large onion, thinly sliced

  • 2 tbsp mayonnaise

  • 1 clove garlic, minced

  • 1 tsp lemon juice

  • Pinch sea salt

Instructions:

  • Prepare the Croquette Mixture: In a bowl, combine wagyu beef, mashed potatoes, egg, breadcrumbs, salt, and pepper. Mix until well combined.

  • Shape and Fill: Take small portions of the mixture, flatten slightly, place a cube of mozzarella in the center, and shape into balls or cylinders.

  • Bread the Croquettes: Dip each croquette into beaten egg, then coat with breadcrumbs evenly.

  • Make the Aioli: Heat olive oil in a pan over medium heat. Cook onions slowly until deeply caramelized and golden. Let cool slightly, then mix with mayonnaise, garlic, lemon juice, and salt.

  • Fry: Heat oil to 350°F and fry croquettes in batches for 3 to 4 minutes until golden and crispy. Drain on paper towels.

  • Serve: Serve hot with caramelized onion aioli on the side.
