Benefits: This vibrant skillet chicken dish is rich in skin-loving nutrients that support a clear, radiant glow from within. Bell peppers are packed with vitamin C, helping to boost collagen production and brighten the complexion. Tomatoes provide lycopene, a powerful antioxidant that helps protect the skin from environmental stressors while promoting an even skin tone. Lean chicken delivers protein essential for skin repair and renewal, making this dish both nourishing and satisfying.

Skin Concern: Skin fatigue and low radiance

Prep Time: 10 minutes | Cook Time: 25 minutes | Serves: 4

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small red onion, sliced

  • 3 cloves garlic, minced

  • 1 1/2 cups cherry tomatoes, halved

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • 1/2 teaspoon red pepper flakes

  • Salt and black pepper to taste

  • 1/4 cup chicken broth

  • Fresh basil leaves for garnish

Instructions:

  • Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and paprika. Add them to the skillet and cook for about 5 to 6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

  • Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced peppers and onion, cooking for about 5 minutes until softened. Stir in the garlic and cook for another minute until fragrant.

  • Build the Sauce: Add the cherry tomatoes, oregano, red pepper flakes, and chicken broth. Stir well and allow the mixture to simmer for 5 to 7 minutes until the tomatoes begin to break down and create a light sauce.

  • Combine and Finish: Return the chicken to the skillet, nestling it into the vegetable mixture. Spoon the sauce over the chicken and let everything simmer together for another 5 minutes to absorb the flavors.

  • Serve: Garnish with fresh basil and serve warm.

Shopping Tips:

  • Choose firm, brightly colored bell peppers for maximum vitamin content and flavor

  • Opt for organic chicken when possible for cleaner protein

  • Select ripe cherry tomatoes that are deep in color and slightly soft to the touch

Cooking Tips:

  • Slice vegetables evenly to ensure consistent cooking

  • Do not overcrowd the skillet when searing the chicken to achieve a proper golden crust

  • Add a squeeze of fresh lemon juice before serving to enhance flavor and boost brightness

This skillet chicken with peppers and tomatoes is a simple, nourishing meal that supports glowing skin while delivering bold, comforting flavor.
