Olive Oil Cake with Citrus Honey Frosting

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • 3 large eggs

  • ¾ cup sugar

  • ½ cup olive oil

  • ½ cup milk or yogurt

  • Zest of 1 lemon or orange

  • 1 tsp vanilla extract

  • 1 cup powdered sugar

  • 2 tbsp Greek yogurt or cream cheese

  • 1 tbsp honey

  • 1 to 2 tbsp fresh lemon or orange juice

  • ½ tsp vanilla extract

Instructions:

  • Prepare the Batter: Preheat oven to 350°F. In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, whisk eggs and sugar until pale and slightly thickened. Slowly add olive oil while whisking, then mix in milk or yogurt, citrus zest, and vanilla.

  • Combine: Fold the dry ingredients into the wet mixture until just combined. Pour into a greased cake pan.

  • Bake: Bake for 35 to 40 minutes until a toothpick inserted comes out clean. Let cool completely before frosting.

  • Make the Frosting: In a bowl, whisk together powdered sugar, Greek yogurt or cream cheese, honey, citrus juice, and vanilla until smooth and spreadable. Adjust consistency as needed.

  • Frost and Serve: Spread frosting evenly over the cooled cake. Slice and serve.
