Ingredients:

Instructions:

  • Prepare the Oven and Pan: Preheat the oven to 350°F. Line an 8 inch round cake pan with parchment paper and lightly grease the sides.

  • Combine the Dry Ingredients: In a bowl, whisk together flour, matcha powder, baking powder, and sea salt until evenly combined.

  • Mix the Eggs and Sugar: In a large mixing bowl, beat the eggs and sugar together for about 3 to 4 minutes until the mixture becomes pale and slightly thick.

  • Add the Wet Ingredients: Stir in olive oil, milk, and vanilla extract until smooth.

  • Create the Batter: Gradually fold the dry ingredients into the wet mixture until just combined and smooth.

  • Bake the Cake: Pour the batter into the prepared cake pan and bake for 25 to 30 minutes until the cake springs back when gently pressed in the center.

  • Cool the Cake: Remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Prepare the Matcha Cream (Optional): In a chilled bowl, whip the heavy cream, powdered sugar, and matcha powder until soft peaks form.

  • Serve: Slice the cake and top with matcha cream, a light dusting of matcha powder, and fresh berries.
