Cucumber, Melon & Watermelon Salad

Posted by Manjeri Skincare Team on

Benefits: This ultra-hydrating fruit salad is packed with water-rich ingredients and antioxidants that help replenish moisture levels and revive tired-looking skin. Watermelon is rich in lycopene and vitamin C, helping protect against environmental stressors while supporting brightness and elasticity. Cucumber delivers silica and hydration to promote smoother-looking skin, while melon provides beta-carotene to support a healthy, radiant complexion. Fresh mint adds a cooling effect that helps reduce heat-related puffiness and refresh the body from within.

Skin Concern: Dehydration and heat-related puffiness

Prep Time: 15 minutes | Cook Time: 0 minutes | Serves: 4

Ingredients:

  • 2 cups watermelon, cubed
  • 2 cups cantaloupe or honeydew melon, cubed
  • 1 cucumber, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup crumbled feta cheese (optional)
  • Juice of 1 lime
  • 1 tbsp extra virgin olive oil
  • Pinch of sea salt
  • Black pepper to taste

Instructions:

  • Prepare the Fruit: Cut watermelon and melon into bite-sized cubes and place into a large serving bowl. Thinly slice cucumber and add to the bowl.
  • Add Fresh Herbs: Toss in fresh mint leaves, gently mixing to distribute throughout the salad.
  • Dress the Salad: Drizzle lime juice and olive oil over the salad. Season lightly with sea salt and black pepper.
  • Finish and Serve: Top with crumbled feta if using and serve chilled.

Shopping Tips:

  • Choose watermelon that feels heavy for its size and has a creamy yellow field spot
  • Melons should smell slightly sweet at the stem for peak ripeness
  • English cucumbers work especially well for their crisp texture and fewer seeds

Cooking Tips:

  • Chill all ingredients beforehand for maximum refreshment
  • Add feta just before serving to maintain texture
  • A sprinkle of tajín or chili-lime seasoning adds a bright flavor contrast

This crisp, cooling salad is perfect for warm days when your skin needs extra hydration and a refreshed, healthy glow.
