  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 2 taftoun or flatbreads
  • 4 eggs
  • 2 tomatoes
  • 2 red or yellow bell peppers
  • 1/2 red onion, thinly sliced
  • 1 tsp sumac
  • 1 tbsp olive oil
  • Salt to taste
  • 1/2 cup labneh
  • 1 tbsp extra virgin olive oil

Instructions:

  • Marinate the Beef: In a bowl, combine yogurt, saffron (with soaking liquid), grated onion, olive oil, salt, and pepper. Add sliced beef and mix well to coat. Cover and marinate for at least 20 minutes, or up to a few hours for deeper flavor.
  • Roast the Vegetables: Preheat oven to 425°F. Place tomatoes and bell peppers on a baking sheet, drizzle with olive oil, and roast for 20–25 minutes until softened and slightly charred. Once done, slice and toss with red onions, sumac, and a pinch of salt.
  • Cook the Beef (Chinjeh): Heat a skillet or grill pan over medium-high heat. Cook marinated beef in batches for 2–3 minutes per side until caramelized and tender.
  • Prepare the Eggs: In a separate pan, cook eggs sunny side up until whites are set and yolks remain runny. Season lightly with salt.
  • Warm the Bread: Lightly warm taftoun bread in a pan or oven until soft and pliable.
  • Assemble the Plate: Place warm bread on a serving plate and top with the saffron-marinated beef. Add sunny side eggs on top or alongside. Serve with roasted tomato and pepper mixture, and a side of labneh drizzled with olive oil.
