Crispy Kale & Labneh Salad

Posted by Manjeri Skincare Team on

Benefits: This vibrant kale and labneh salad is packed with skin-renewing nutrients that support detoxification and long-term radiance. Kale is rich in vitamins A, C, and K, which help promote skin cell turnover, brighten the complexion, and support elasticity. Labneh adds probiotics that balance the gut microbiome, helping reduce internal triggers of skin imbalance. Lemon and olive oil deliver antioxidants and healthy fats that enhance nutrient absorption and protect against oxidative stress, making this a powerful dish for maintaining clear, energized skin.

Skin Concern: Hyperpigmentation and uneven tone

Prep Time: 15 minutes | Cook Time: 10 minutes | Serves: 2

Ingredients:

  • 4 cups kale, stems removed and chopped
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup labneh
  • 1/4 cup toasted almonds or walnuts
  • 1/4 cup pomegranate seeds
  • 2 tbsp shaved parmesan (optional)

Instructions:

  • Prep the Kale: Place chopped kale in a large bowl. Drizzle with olive oil, lemon juice, salt, and pepper. Massage the kale with your hands for 2–3 minutes until softened and slightly wilted.
  • Crisp the Kale (Optional): For added texture, spread half the kale on a baking sheet and bake at 375°F for 8–10 minutes until slightly crisped, then mix back with the fresh kale.
  • Prepare the Labneh Base: Spread labneh across a serving plate or bowl, creating a smooth base layer.
  • Assemble the Salad: Pile the dressed kale on top of the labneh. Sprinkle with toasted nuts, pomegranate seeds, and parmesan if using.
  • Serve: Drizzle with a touch more olive oil and an extra squeeze of lemon before serving.

Shopping Tips:

  • Choose dark, firm kale leaves without yellowing for maximum nutrient content
  • Opt for fresh labneh or high-quality Greek yogurt for best texture and probiotic benefits
  • Select fresh pomegranate seeds for a burst of antioxidants and natural sweetness

Cooking Tips:

  • Massaging kale is key to breaking down its fibers and making it more digestible
  • Toast nuts lightly to enhance flavor and crunch
  • Add grilled chicken or chickpeas for a protein boost

This fresh, texture-rich salad delivers bold flavor and targeted nutrients to support a brighter, more even complexion from within.
