Caviar Sandwich with Chopped Egg, Chives & Crème Fraîche

Ingredients:

For the Sandwiches:

  • 8 slices brioche, challah, or soft white sandwich bread
  • 4 large eggs
  • 1/2 cup crème fraîche
  • 2 tbsp fresh chives, finely chopped
  • 2–3 oz caviar
  • 2 tbsp unsalted butter, softened
  • 1 tsp fresh lemon juice
  • 1/2 tsp finely grated lemon zest
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, optional

For Garnish:

  • Additional chopped chives
  • Caviar
  • Lemon wedges, optional

Instructions:

  • Cook the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil, remove from the heat, cover, and let stand for 10–11 minutes. Transfer immediately to an ice bath.
  • Chop the Eggs: Once completely cool, peel the eggs and finely chop them. Season lightly with black pepper. Use salt sparingly since the caviar will provide plenty of salinity.
  • Prepare the Crème Fraîche: Stir the crème fraîche with the lemon juice, lemon zest, and half of the chopped chives until smooth.
  • Prepare the Bread: Lightly butter one side of each bread slice. For an elegant presentation, trim away the crusts before assembling.
  • Layer the Sandwiches: Spread a generous layer of the lemon-chive crème fraîche over four slices of bread. Add an even layer of chopped egg, followed by small spoonfuls of caviar.
  • Finish: Sprinkle with the remaining chives and freshly ground black pepper. Top with the remaining bread slices and press very gently to secure.
  • Slice and Serve: Cut each sandwich into halves, rectangles, or small finger sandwiches. Top with an additional spoonful of caviar and fresh chives if desired. Serve immediately.
