Crème Brûlée

Benefits: This elegant French custard combines eggs and dairy to provide protein, vitamin A, vitamin B12, and other nutrients that support normal skin renewal and maintenance. Egg yolks contain fat-soluble nutrients and choline, while dairy provides protein that supplies amino acids needed for healthy skin structure. Fresh berries can be added when serving for an antioxidant-rich source of vitamin C.

Prep Time: 15 minutes | Cook Time: 40 minutes | Chill Time: 4 hours | Serves: 6

Ingredients:

  • 2 cups heavy cream
  • 1 vanilla bean or 2 tsp pure vanilla extract
  • 5 large egg yolks
  • 1/3 cup granulated sugar
  • Pinch of sea salt
  • 3 tbsp granulated sugar, for caramelizing

For Serving:

  • Fresh raspberries, strawberries, or blueberries
  • Fresh mint leaves, optional

Instructions:

  • Prepare the Oven: Preheat the oven to 325°F. Place six 4-ounce ramekins inside a deep baking dish or roasting pan.
  • Infuse the Cream: Pour the heavy cream into a saucepan. If using a vanilla bean, split it lengthwise, scrape out the seeds, and add both the seeds and pod to the cream. Heat over medium-low heat until steaming and small bubbles begin forming around the edges. Do not boil. Remove from heat and allow to steep for 10 minutes. Remove the vanilla pod.
  • Prepare the Custard: In a large bowl, whisk the egg yolks, 1/3 cup sugar, and sea salt until smooth and slightly pale.
  • Temper the Eggs: Slowly pour a small amount of the warm cream into the yolks while whisking constantly. Gradually add the remaining cream, continuing to whisk. Stir in vanilla extract at this stage if you're using it instead of a vanilla bean.
  • Strain: Pour the custard through a fine-mesh sieve for an exceptionally smooth texture.
  • Fill the Ramekins: Divide the custard evenly among the ramekins.
  • Prepare the Water Bath: Carefully pour hot water into the baking dish until it reaches approximately halfway up the sides of the ramekins.
  • Bake: Bake for 35–40 minutes, or until the edges are set but the centers still have a slight jiggle.
  • Chill: Carefully remove the ramekins from the water bath. Cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
  • Caramelize the Tops: Just before serving, sprinkle each custard with a thin, even layer of granulated sugar. Use a kitchen torch to caramelize the sugar until deeply golden and glass-like. Allow it to harden for 1–2 minutes.
  • Serve: Garnish with fresh berries and mint, if desired, and serve immediately while the caramelized topping is crisp.

  • Remove the crème brûlée while the centers still wobble slightly. They will continue setting as they cool.
  • Make the custards a day ahead, but wait to caramelize the sugar until immediately before serving.
  • For the signature crisp shell, use a thin, even layer of sugar rather than a heavy coating.
