Beef Samosas

Ingredients:

For the Beef Filling:

  • 1 lb lean ground beef
  • 1 tbsp extra virgin olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 small jalapeño or green chili, finely chopped, optional
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/2 tsp smoked paprika
  • 1 cup frozen green peas, thawed
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp fresh lemon juice
  • Salt and freshly ground black pepper, to taste

For the Samosas:

  • 18 samosa wrappers or spring roll pastry sheets
  • 2 tbsp all-purpose flour
  • 3 tbsp water
  • Avocado or vegetable oil, for frying

For Serving:

  • Fresh cilantro
  • Mint chutney
  • Tamarind chutney
  • Lemon wedges

Instructions:

  • Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 3–4 minutes until softened. Add the garlic, ginger, and green chili and cook for another minute until fragrant.
  • Brown the Beef: Add the ground beef and cook for 6–8 minutes, breaking it into small pieces as it browns. Drain excess fat if necessary.
  • Add the Spices: Stir in the cumin, coriander, turmeric, garam masala, smoked paprika, salt, and black pepper. Cook for 1–2 minutes to allow the spices to become fragrant.
  • Finish the Filling: Fold in the green peas and cook for another 2 minutes. Remove from the heat and stir in the cilantro and lemon juice. Allow the filling to cool completely before assembling the samosas.
  • Prepare the Paste: Mix the flour and water in a small bowl to create a thick paste for sealing the wrappers.
  • Shape the Samosas: Form each wrapper into a cone and fill with about 2 tablespoons of the beef mixture. Avoid overfilling. Brush the open edge with the flour paste and press firmly to seal into a triangular shape.
  • Fry the Samosas: Heat about 2 inches of oil in a deep skillet or pot to 350°F. Fry the samosas in small batches for 3–4 minutes, turning occasionally, until crisp and evenly golden.
  • Drain: Transfer the cooked samosas to a wire rack to drain and remain crisp.
  • Serve: Garnish with fresh cilantro and serve warm with mint chutney, tamarind chutney, and lemon wedges.

Shopping Tips:

  • Beef: Choose lean ground beef for a flavorful filling without excessive grease.
  • Wrappers: Look for samosa pastry at Indian, Middle Eastern, or international grocery stores. Spring roll pastry can also work when samosa wrappers aren't available.
  • Peas: Frozen peas are convenient and maintain their bright color and slightly sweet flavor.
  • Spices: Fresh cumin, coriander, turmeric, and garam masala will provide significantly more aroma than spices that have been stored for a long time.
  • Chutney: Refrigerated mint and tamarind chutneys are convenient, but homemade versions allow you to control the sweetness and heat.

Cooking Tips:

  • Make sure the beef filling is completely cool before filling the wrappers. Warm filling can soften the pastry and make it difficult to seal.
  • Keep unused wrappers covered with a slightly damp kitchen towel while assembling so they don't dry out.
  • Don't overcrowd the pan when frying, as this lowers the oil temperature and can result in greasy samosas.
  • For a lighter version, brush the samosas lightly with oil and air fry at 375°F until crisp and golden, turning halfway through.
