Vegan Frozen Coconut Lime Bars

Ingredients:

For the Crust:

  • 1 cup raw almonds
  • 1 cup unsweetened shredded coconut
  • 8–10 Medjool dates, pitted
  • 2 tbsp melted coconut oil
  • 1/4 tsp sea salt

For the Coconut Lime Filling:

  • 1 1/2 cups raw cashews, soaked for at least 4 hours and drained
  • 1 cup full-fat canned coconut milk
  • 1/2 cup fresh lime juice
  • 2 tbsp finely grated lime zest
  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp pure vanilla extract
  • Pinch of sea salt

For Garnish:

  • Fresh lime zest
  • Unsweetened toasted coconut flakes
  • Thin lime slices, optional

Instructions:

  • Prepare the Pan: Line an 8-inch square baking pan with parchment paper, leaving enough overhang on the sides to easily lift out the frozen bars.

  • Make the Crust: Add the almonds and shredded coconut to a food processor and pulse until finely chopped. Add the dates, coconut oil, and sea salt. Process until the mixture becomes sticky and holds together when pressed.

  • Form the Base: Transfer the crust mixture to the prepared pan and press it firmly into an even layer. Place in the freezer while preparing the filling.

  • Blend the Filling: Add the soaked cashews, coconut milk, lime juice, lime zest, maple syrup, coconut oil, vanilla, and sea salt to a high-speed blender. Blend until completely smooth and creamy.

  • Assemble the Bars: Pour the coconut lime filling over the chilled crust and smooth the top with a spatula.

  • Freeze: Freeze for at least 4 hours, or until completely firm. For the cleanest slices, freezing overnight works especially well.

  • Slice: Lift the frozen dessert from the pan using the parchment paper. Allow it to sit at room temperature for 5–10 minutes, then slice into 12 bars with a sharp knife.

  • Garnish and Serve: Finish with fresh lime zest and toasted coconut flakes. Serve chilled or slightly softened for a creamier texture.

  • Coconut Milk: Choose full-fat canned coconut milk with a thick, creamy consistency. Avoid refrigerated coconut beverages, which are too thin for the filling.
  • Limes: Look for limes that feel heavy for their size and have smooth, vibrant green skin. You'll need several since both the juice and zest are used.
  • Cashews: Raw, unsalted cashews work best because they blend into a neutral, creamy base after soaking.
