Ingredients:

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, sliced

  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • 1 can (14 oz) crushed tomatoes
  • 3–4 large eggs
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish
  • Crumbled feta (optional)

Instructions:

  • Build the Base: Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes. Stir in sliced bell pepper and cook until slightly tender. Add garlic and cook until fragrant.
  • Add the Spices: Sprinkle in turmeric, cumin, paprika, and chili flakes. Stir well and allow the spices to bloom for about 1 minute to enhance their flavor and benefits.
  • Simmer the Sauce: Pour in crushed tomatoes and stir to combine. Season with salt and pepper. Let the sauce simmer for 10–15 minutes until slightly thickened.
  • Add the Eggs: Make small wells in the sauce and crack eggs into each well. Cover the skillet and cook until eggs are set to your preference.
  • Serve: Garnish with fresh herbs and optional feta. Serve warm with crusty bread or a side of whole grains.
