Pot Roast and Mashed Potatoes

Ingredients:

For the Pot Roast:

  • 2 lbs beef chuck roast

  • 1 tbsp olive oil

  • 1 tsp sea salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 3 carrots, chopped

  • 2 potatoes, chopped

  • 1 small onion, quartered

  • 3 cloves garlic, smashed

  • 2 cups beef broth

  • 1 tbsp tomato paste

  • 1 tsp thyme

For the Mashed Potatoes:

  • 3 cups potatoes, peeled and chopped

  • 3 tbsp butter

  • ½ cup milk or cream

  • ½ tsp sea salt

Instructions:

  • Season and Sear the Roast: Pat the beef dry and season with salt, pepper, garlic powder, and onion powder. Heat olive oil in a large pot over medium-high heat and sear the roast on all sides until browned.

  • Build the Base: Add carrots, potatoes, onion, and garlic around the roast. Pour in beef broth and stir in tomato paste and thyme.

  • Slow Cook: Cover and cook on low heat for 2.5 to 3 hours, or until the meat is tender and easily pulls apart.

  • Prepare the Mashed Potatoes: Boil potatoes in salted water until fork-tender. Drain and mash with butter, milk or cream, and salt until smooth and creamy.

  • Serve: Plate pot roast with vegetables alongside mashed potatoes and spoon the rich broth over everything.
