Instructions
Brown the Meat: Heat olive oil and butter in a Dutch oven over medium-high heat. Add the sausage and ground beef, breaking them into small pieces until browned. Remove and set aside.
Build the Aromatics: Add onion, carrots, celery, and mushrooms to the same pot. Cook for 8–10 minutes until softened. Stir in the garlic and cook for another minute.
Deglaze: Pour in the white wine, scraping the browned bits from the bottom of the pot. Simmer for 3–4 minutes until slightly reduced.
Create the White Bolognese: Return the meat to the pot. Add the stock, heavy cream, milk, thyme, rosemary, salt, and pepper. Reduce the heat to low and simmer uncovered for 45–60 minutes, stirring occasionally, until thick and silky.
Cook the Pasta: Cook the pappardelle in generously salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
