Ingredients:

For the Beef Patties:

  • 1 lb ground beef, preferably 85–90% lean
  • 1/4 cup yellow onion, finely grated
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp sea salt
  • 1 tbsp avocado or olive oil, for cooking

For the Mushroom Gravy:

  • 8 oz cremini mushrooms, sliced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1/2 tsp garlic powder
  • Freshly ground black pepper, to taste

For the Eggs:

  • 4 large eggs
  • 1 tsp butter or olive oil
  • Salt and freshly ground black pepper, to taste

For Serving:

  • 4 cups cooked jasmine or medium-grain white rice
  • 2 green onions, thinly sliced
  • Fresh parsley, optional

Instructions:

  • Prepare the Beef Patties: Combine the ground beef, grated onion, garlic, Worcestershire sauce, soy sauce, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
  • Shape the Patties: Divide the mixture into four portions and form into patties slightly wider than the finished burgers will be, as they will shrink during cooking.
  • Sear the Patties: Heat oil in a large skillet over medium-high heat. Cook the patties for approximately 4–5 minutes per side, or until browned and cooked to your preferred doneness. Transfer to a plate and keep warm.
  • Sauté the Mushrooms: Reduce the heat to medium. Add the butter and sliced mushrooms to the same skillet. Cook for 5–6 minutes until the mushrooms are golden and tender.
  • Make the Gravy: Sprinkle the flour over the mushrooms and stir for about 1 minute. Gradually whisk in the beef broth, scraping up the browned bits from the bottom of the skillet.
  • Season the Gravy: Add Worcestershire sauce, soy sauce, garlic powder, and black pepper. Simmer for 4–6 minutes until the gravy is smooth and thick enough to coat the back of a spoon. Return the beef patties to the skillet and spoon some of the gravy over them.
  • Fry the Eggs: Melt butter in a separate skillet over medium-low heat. Crack in the eggs and cook until the whites are completely set while keeping the yolks beautifully runny. Season lightly with salt and pepper.
  • Assemble the Loco Moco: Divide the warm rice among four shallow bowls or plates. Place a beef patty over each portion of rice and generously spoon the mushroom gravy over the top.
  • Add the Eggs: Top each patty with a sunny-side-up egg.
  • Serve: Garnish with sliced green onions and serve immediately. Break the runny yolk over the beef and rice so it mixes with the savory gravy.
