Instructions:

  • Prepare the Cream Sauce: In a large skillet over medium heat, melt the butter. Add the shallot and sauté for 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.
  • Build the Sauce: Pour in the lobster stock and simmer for 2 minutes. Stir in the heavy cream and bring to a gentle simmer. Add the Parmesan cheese and whisk until melted and smooth.
  • Finish the Sauce: Stir in the lemon juice, lemon zest, parsley, and chives. Season with salt and black pepper. If needed, add a splash of reserved pasta water to achieve a silky consistency.
  • Combine: Gently fold the cooked ravioli into the cream sauce, coating each piece without breaking the pasta.
  • Serve: Divide among serving plates and garnish with additional Parmesan, fresh herbs, and a little lemon zest.
