Gnocchi a la Vodka

Ingredients:

  • 1 lb potato gnocchi
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 small shallot, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup vodka
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh basil, chopped, for garnish

Instructions:

  • Cook the Gnocchi: Bring a large pot of salted water to a boil. Cook the gnocchi according to package directions until they float to the surface. Reserve 1/2 cup of pasta water, then drain.
  • Build the Sauce: Heat olive oil and butter in a large skillet over medium heat. Add shallots and cook until softened, about 3–4 minutes. Stir in garlic and cook for 30 seconds.
  • Develop the Flavor: Add tomato paste and cook for 2–3 minutes, stirring frequently until it darkens slightly. Stir in the red pepper flakes if using.
  • Deglaze: Carefully pour in the vodka and simmer for 2–3 minutes until most of the alcohol has evaporated.
  • Finish the Sauce: Reduce the heat to low. Stir in the heavy cream until smooth, then mix in the Parmesan cheese. Season with salt and pepper. If needed, add a splash of reserved pasta water to achieve a silky consistency.
  • Combine: Add the cooked gnocchi to the skillet and gently toss until evenly coated in the sauce.
  • Serve: Garnish with fresh basil and additional grated Parmesan before serving.
