Egg Salad Sandwich

Ingredients:

  • 8 large eggs
  • 1/4 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 celery stalk, finely diced
  • 2 tbsp chives, finely chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Salt and freshly ground black pepper, to taste
  • 8 slices whole grain bread
  • Lettuce leaves
  • Tomato slices (optional)

Instructions:

  • Cook the Eggs: Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 10–12 minutes. Transfer the eggs to an ice bath before peeling.
  • Prepare the Filling: Chop the peeled eggs and place them in a large bowl. Add Greek yogurt, mayonnaise, Dijon mustard, celery, chives, dill, lemon juice, salt, and pepper. Gently fold everything together until well combined.
  • Assemble the Sandwiches: Toast the whole grain bread if desired. Layer lettuce leaves on four slices of bread, then evenly divide the egg salad among them. Add tomato slices if using and top with the remaining bread.
  • Serve: Slice each sandwich in half and serve immediately or refrigerate until ready to enjoy.
