Crab and Artichoke Lasagna

Ingredients:

For the Filling:

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup fresh spinach, chopped

  • 1 cup canned or jarred artichoke hearts, drained and chopped

  • 1 cup lump crab meat

  • ½ cup ricotta cheese

  • ¼ cup grated parmesan cheese

  • ½ tsp sea salt

  • ¼ tsp black pepper

For the Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups milk

  • ½ cup grated parmesan cheese

  • ¼ tsp nutmeg

  • Pinch sea salt

For Assembly:

  • 6 lasagna noodles, cooked

  • 1 cup shredded mozzarella cheese

  • Extra parmesan for topping

Instructions:

  • Prepare the Filling: Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant, then stir in spinach and cook until wilted. Add chopped artichokes and cook for another 2 minutes. Remove from heat and fold in crab meat, ricotta, parmesan, salt, and pepper. Set aside.

  • Make the Sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk, whisking continuously until smooth and thickened. Stir in parmesan cheese, nutmeg, and a pinch of salt.

  • Assemble the Lasagna: Preheat oven to 375°F. Spread a thin layer of sauce on the bottom of a baking dish. Add a layer of lasagna noodles, followed by the crab and artichoke filling, then sauce. Repeat layers, finishing with sauce and topping with mozzarella and extra parmesan.

  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden and bubbly.

  • Serve: Let cool slightly before slicing and serving.
