Classic Caesar Salad with Anchovy Dressing

  • Emulsify the Dressing: Slowly drizzle in the olive oil while whisking continuously until the dressing becomes smooth and creamy. Stir in the grated Parmesan and season with black pepper. Taste and adjust seasoning if needed.
  • Prepare the Salad: Wash and thoroughly dry the romaine lettuce before chopping into bite-sized pieces.
  • Assemble: Place the romaine in a large bowl. Add the croutons and shaved Parmesan. Drizzle with the dressing and toss gently until evenly coated.
  • Serve: Divide among serving plates and finish with extra shaved Parmesan and freshly cracked black pepper.
