Chipotle Chicken Stuffed Poblanos with Rice

For the Rice:

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1/2 tsp salt

For Garnish:

  • Fresh cilantro
  • Lime wedges
  • Sliced avocado (optional)

Instructions:

  • Cook the Rice: Heat olive oil in a saucepan over medium heat. Add rice and toast for 1–2 minutes. Pour in chicken broth and salt, bring to a boil, then reduce heat to low. Cover and cook for 15–18 minutes until tender. Fluff with a fork and set aside.
  • Prepare the Poblanos: Preheat oven to 400°F. Slice the poblano peppers lengthwise and remove the seeds and membranes. Place on a baking sheet.
  • Make the Filling: Heat olive oil in a skillet over medium heat. Sauté onion until softened, then add garlic and chipotle pepper. Stir in diced tomatoes, cumin, smoked paprika, salt, and pepper. Add shredded chicken and cook for 3–4 minutes until heated through.
  • Stuff the Peppers: Fill each poblano half with the chipotle chicken mixture. Top evenly with shredded cheese.
  • Bake: Bake for 20–25 minutes until the peppers are tender and the cheese is melted and bubbly.
  • Serve: Plate the stuffed poblanos alongside the rice. Garnish with fresh cilantro, lime wedges, and avocado if desired.
