Chicken Nanban with Tartar Sauce

Ingredients:

For the Chicken:

  • 1 1/2 lbs boneless skinless chicken thighs
  • Salt and black pepper to taste

  • 2 eggs, beaten
  • Vegetable oil for frying

For the Nanban Sauce:

  • 1/4 cup rice vinegar
  • 3 tbsp soy sauce
  • 2 tbsp sugar
  • 2 tbsp water

For the Tartar Sauce:

  • 2 hard-boiled eggs, finely chopped
  • 1/2 cup mayonnaise
  • 2 tbsp finely diced onion
  • 1 tbsp finely chopped parsley
  • 1 tsp lemon juice
  • Salt and black pepper to taste

For Serving:

  • 2 cups shredded cabbage
  • Lemon wedges
  • Steamed rice

Instructions:

  • Prepare the Tartar Sauce: In a bowl, combine chopped hard-boiled eggs, mayonnaise, diced onion, parsley, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
  • Make the Nanban Sauce: In a small saucepan, combine rice vinegar, soy sauce, sugar, and water. Bring to a gentle simmer and stir until the sugar dissolves. Remove from heat and set aside.
  • Prepare the Chicken: Season chicken thighs with salt and pepper. Dredge each piece in flour, then dip into beaten eggs.
  • Fry the Chicken: Heat vegetable oil in a skillet over medium-high heat. Fry the chicken for 4–5 minutes per side until golden brown and cooked through. Transfer to a wire rack or paper towel-lined plate.
  • Coat in Sauce: While still warm, dip each piece of fried chicken into the Nanban sauce, ensuring it is lightly coated.
  • Serve: Place shredded cabbage and steamed rice on serving plates. Top with the Nanban chicken and generously spoon tartar sauce over the chicken. Serve with lemon wedges.
