Spicy Ginger-Coriander Cooler

Ingredients:

  • 1-inch piece fresh ginger (thinly sliced)
  • ½ teaspoon coriander seeds (lightly crushed)
  • 1 small red chili pepper (thinly sliced, adjust for spice level)
  • 1 tablespoon honey or agave syrup
  • ½ lemon, juiced
  • 1 cup cold sparkling water
  • 1 cup cold still water
  • Ice cubes
  • Fresh coriander (cilantro) leaves for garnish

Instructions:

  1. In a small pot, bring ½ cup of water to a boil. Add ginger, crushed coriander seeds, and chili pepper. Let it simmer for 3 minutes, then remove from heat and steep for 5 minutes.
  2. Strain the mixture into a glass or small pitcher, discarding the solids. Stir in honey (or agave) and lemon juice.
  3. Fill glasses with ice cubes, pour in the infused mixture, and top with cold sparkling water.
  4. Garnish with fresh coriander leaves and an optional chili slice for extra heat.
  5. Stir and enjoy chilled!
