Pumpkin Pecan Cheesecake

Ingredients:

  • 1 cup pumpkin purée

  • 1/2 cup Greek yogurt

  • 1/4 cup pure maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tsp pumpkin pie spice

  • Pinch of sea salt

Crust:

  • 1 cup pecans, finely chopped

  • 1/2 cup oats

  • 2 tbsp coconut oil, melted

  • 1 tbsp maple syrup

Instructions:

Prep Crust: Preheat oven to 350°F. Combine pecans, oats, coconut oil, and maple syrup in a bowl. Press mixture into the bottom of a greased pie dish. Bake for 10 minutes, then set aside.

Make Filling: Whisk pumpkin purée, Greek yogurt, maple syrup, eggs, vanilla, pumpkin pie spice, and salt until smooth.

Assemble: Pour filling over crust and smooth the top.

Bake: Bake for 35–40 minutes or until set in the center.

Serve: Cool completely before slicing. Garnish with crushed pecans or a drizzle of honey.
