  • 1 cup mushrooms, finely chopped

  • ½ cup dry white wine

  • 1 cup whole milk

  • ½ cup heavy cream

  • ¼ tsp sea salt

  • ¼ tsp black pepper

For the Finish:

  • 1 tbsp truffle oil or truffle paste

  • ½ cup grated Grana Padano or parmesan cheese

  • Fresh parsley, chopped (optional)

Instructions:

  • Prepare the Pasta Dough: On a clean surface, mound flour and create a well in the center. Crack in eggs and add salt. Gradually mix until a dough forms, then knead for 8 to 10 minutes until smooth. Wrap and let rest for 20 minutes. Roll out and cut into wide pappardelle strips.

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook fresh pappardelle for 2 to 3 minutes until tender. Reserve ½ cup pasta water, then drain.

  • Make the White Bolognese: Heat olive oil in a large pan over medium heat. Add sausage and cook until browned, breaking it apart. Stir in onion and garlic, cooking until softened. Add mushrooms and cook until moisture evaporates.

  • Build the Sauce: Pour in white wine and simmer until reduced. Add milk and cream, stirring until slightly thickened. Season with salt and pepper.

  • Combine: Add cooked pasta to the sauce, tossing gently. Use reserved pasta water as needed to loosen the sauce. Stir in truffle oil and grated cheese.

  • Serve: Plate immediately and garnish with extra cheese and parsley if desired.
