Nigerian Egusi Stew with Leafy Greens

Ingredients:

  • ½ cup ground egusi (melon seeds)

  • 1 small tomato, blended

  • 1 clove garlic

  • 1 small onion

  • 2 cups spinach

  • 1 tbsp red palm oil or coconut oil

  • Salt and pepper to taste

Instructions:

  • Sauté Base: In oil, cook garlic and onion. Add blended tomato and simmer.

  • Add Egusi: Stir in ground egusi and simmer for 10–15 minutes until thick.

  • Add Greens: Stir in spinach and cook for another 2–3 minutes.

  • Serve: Spoon into bowls and enjoy with steamed yam, rice, or gluten-free flatbread.
