Greek Lemon-Herb Roasted Chicken with Roasted Beets & Tzatziki

Ingredients:

  • 2 bone-in, skin-on chicken thighs or breasts

  • Juice of 1 lemon

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • 2 garlic cloves, minced

  • Sea salt and black pepper to taste

  • 2 medium beets, peeled and cubed

  • 1 tbsp olive oil (for beets)

  • 1/2 cup plain Greek yogurt

  • 1/4 cucumber, grated and squeezed to remove excess water

  • 1 garlic clove, grated

  • 1 tsp lemon juice

  • 1 tbsp chopped fresh dill

  • Sea salt to taste

Instructions:
Preheat the oven to 400°F. In a small bowl, mix lemon juice, olive oil, oregano, minced garlic, salt, and pepper. Rub the mixture all over the chicken and place it in a baking dish.
Toss the cubed beets with olive oil and a pinch of salt, then spread them on a lined baking sheet. Roast the chicken and beets for 35–40 minutes, or until the chicken is golden and cooked through and the beets are tender.
While everything roasts, make the tzatziki. In a bowl, combine the Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt. Mix well and chill until ready to serve.
Plate the roasted chicken alongside the beets and spoon a generous dollop of tzatziki on the side.
