Ingredients:

  • 1 lb beef, cut into chunks

  • ½ cup plain yogurt

  • 1 tbsp ginger-garlic paste

  • 1 tsp turmeric

  • 1 tsp chili powder

  • 1 tsp garam masala

  • ½ tsp sea salt

For the Rice:

  • 2 cups basmati rice

  • 4 cups water

  • 2 bay leaves

  • 4 cloves

  • 2 cardamom pods

  • 1 cinnamon stick

  • Pinch sea salt

For the Biryani Base:

  • 2 tbsp oil or ghee

  • 1 large onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 tomato, chopped

  • ½ cup fresh cilantro, chopped

  • ¼ cup fresh mint leaves

Instructions:

  • Marinate the Beef: In a bowl, combine beef with yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, and salt. Mix well and let marinate for at least 30 minutes or up to overnight for deeper flavor.

  • Cook the Rice: Rinse basmati rice until water runs clear. In a pot, bring water to a boil with bay leaves, cloves, cardamom, cinnamon, and salt. Add rice and cook until about 70 percent done, then drain and set aside.

  • Prepare the Base: Heat oil or ghee in a large pot. Add sliced onions and cook until golden brown. Stir in garlic and tomatoes, cooking until softened. Add marinated beef and cook until browned and partially cooked through.

  • Layer the Biryani: Reduce heat to low. Layer partially cooked rice over the beef mixture. Sprinkle cilantro and mint on top. Cover tightly and cook on low heat for 20 to 25 minutes until rice is fully cooked and flavors are infused.

  • Serve: Gently fluff the biryani before serving to combine layers.
